Stuck for dinner but have a fridge full of vegetables? Take some left over brown rice, any vegetables you have sitting in your veggie bin; a kumara and perhaps a can of chickpeas which can be dressed up to take to the ball.
My suggestion would be to stir fry a leek, a courgette, a few mushrooms and some broccoli together. Add in the left over rice with a few splashes of Tamari sauce (a Japanese sauce which is vegan and gluten-free). Roast an orange kumara which has been sliced on a baking tray alongside spicy chickpeas (which you can season with cumin, coriander powder and chilli flakes, and a grind of salt). A taste sensation and filling too!
