Having tried the more "intense" sauce options to flavour jackfruit (mexican chilli and lime, BBQ and curry), I wanted to try a more subtle flavour which is just perfect for lunch. I mixed jackfruit on this open ciabatta sandwich with a splash of lemon, salt and pepper and french mustard. Spread your ciabatta toast with avocado, then the flavoured jackfruit and a couple of slices of tomato. Salt and pepper to taste. I used a handheld food processor to make the jackfruit smooth but you may prefer to keep it more chunky and mix in cucumber, onion, green pepper or celery. Slices gherkins might be nice to try on the top as well.
I used Nature's Choice Young Green Jackfruit in this recipe but have used Ceres Organic Young Jackfruit in the past as well.
